I think it will be nearly impossible to find a 7 string George Van Eps guitar pickup. Even though the 7580 and 7581 seven string models were produced for about 10 years I'm sure production numbers were low and during that time period there would have been no other pickup options to substitute for the original pickups. By the time new 7 string pickup options would become available, the Van Eps models would have been considered collectible and probably not tampered with. If you really want a Van Eps 7 string pickup, you will probably need to buy a Van Eps guitar.
Here is a Van Eps listed on a US gear website called Reverb. This one is a bit overpriced but will help you to begin establishing the value of these instruments:
As far as used 7 string pickups go, I just looked through about 30 pages of 7 string pickup listings on eBay USA. Of the 1,500 pickups listed, 2 were used. I think one was a Jackson and the other an Ibanez.
So, I think your hunch that these used pickups are rare is justified. Loads of new pups from great pup builders are available. You might want to consider a new model pickup, I'm sure there are some models out there that might meet your needs.

during my search for new pickups I found out that Gretsch made a couple of 7-string guitars in the 60's and 70's - the George Van Eps Signature guitars.
So, I am searching for these pickups, especially the neck humbucker.
Now I am hoping... Has anyone some of these or an idea where to find them?
I am also looking for other vintage 7-string humbuckers.

If you know the value of your parts and you want top dollar, Reverb.com is your best bet.
You can let demand determine the value of your parts by listing them on eBay but the bay will want a big bite out of your selling price.
No problem with hanging onto the body and looking for a neck, the pieces you own are not getting any cheaper and a neck might show up for $75 or less if you are willing to do a weekly search on eBay. Just make sure the neck you buy is better than the neck you own.

Your Apollo came out of the Fujigen Gakki factory in the later 1960's. Finding a neck will be tough but not impossible. Many Fujigen guitars were imported into the US. The most popular brand name used on these imports was Greco, but they were also sold as Apollo, Sekova, Domino, Encore, Merlin, Fiama and Heit just to name a few. The laminate neck construction started in 1967 so you are looking for a late 60's-early 70's neck. You probably will not find an exact match for your fender style headstock shape since most of the Fujigen hollow bodies used 3 on side tuners.
Be prepared for a long search, there are a lot more bodies than necks out in the market.
I have a suggestion assuming you have no emotional attachment to this particular instrument. Consider parting out the body you have and using the money to buy an intact Fujigen built hollow body. The parts used on your guitar should be in demand since many similar instruments still exist. Generally, these 60's Japanese imports are worth more in parts than intact instruments so you might be money ahead to salvage whatever value you can out of the body and shop for a different guitar.
